Constitution and composition chemistry of the precooked goatlike buchada produced in the state of Paraíba, Brazil BABT
Santos,Neube Michel dos; Costa,Roberto Germano; Madruga,Marta Suely; Medeiros,Ariosvaldo Nunes de; Albuquerque,Caroline Lima Cavalcante de; Queiroga,Rita de Cássia Ramos do Egypto.
The objective of the present work was to quantify the constitution and composition chemistry of the precooked goat buchada produced in the state of Paraíba, Brazil. The goat buchada presented considerable yield in relation to the live weight. High protein content was observed in the products analyzed. The lipid content presented high variation as result of the lack of standardization of products produced in the state and no control on parameters such as age, weight and breed of the slaughtered animals was observed. Although no difference (P<0.05) in the lipid content was observed, the highest percentages were observed in samples from Remígio and Barra de Santa Rosa, with 14.52 and 15.90%, respectively, as result of the addition of high amounts of...

Effect of Environmental Temperature During the First Week of Brooding Period on Broiler Chick Body Weight, Viscera and Bone Development Rev. Bras. Ciênc. Avic.
Moraes,VMB; Malheiros,RD; Furlan,RL; Bruno,LDG; Malheiros,EB; Macari,M.
The objective of the present study was to assess the development of broiler chicks during the first week post-hatching when reared at three different environmental temperatures. A total of 480 day-old chicks were placed in three environmentally controlled rooms (20, 25 and 35°C) from 1 to 7 days of age. Body weight gain, feed and water intake, as well as liver, gizzard, heart, yolk sac and bursa of Fabricius weights were measured daily. Tibia and femur bones were weighed and their length and width (medial diameter) were also obtained. The chicks reared at 20º C had lower weight gain and ingested less food than chicks reared at 25°C and less water than chicks kept at 35°C. Relative weights of the liver, heart, and gizzard were affected by environmental...

Enzymatic hydrolysis of cuttlefish (Sepia officinalis) and sardine (Sardina pilchardus) viscera using commercial proteases: Effects on lipid distribution and amino acid composition ArchiMer
Kechaou, Emna; Durnay, Justine; Donnay-moreno, Claire; Jaouen, Pascal; Gouygou, Jean-paul; Berge, Jean-pascal; Ben Arnar, Raja.
Total lipid and phospholipid recovery as well as amino acid quality and composition from cuttlefish (Sepia officinalis) and sardine (Sardina pilchardus) were compared. Enzymatic hydrolyses were performed using the three proteases Protamex, Alcalase, and Flavourzyme by the pH-stat method (24 h, pH 8, 50 degrees C). Three fractions were generated: an insoluble sludge, a soluble aqueous phase, and an oily phase. For each fraction, lipids, phospholipids, and proteins were quantified. Quantitative and qualitative analyses of the raw material and hydrolysates were performed. The degree of hydrolysis (DH) for cuttlefish viscera was 3.2% using Protamex, 6.8% using Flavourzyme, and 7% using Alcalase. DH for sardine viscera was 1.9% (using Flavourzyme), 3.1% (using...
